Good question.

It's actually more of a security risk to tell people what kind of mail 
service one uses or where.

I read that proton mail is free and very secure.

Fax machines are more secure than email. Modern snoops don't have the
technology or ability to monitor older technologies inexpensively enough
to be effective. Most observational institutions only get budget for 
recent technologies. So, as the social technological focus shifts, the 
ability to monitor things like 300 baud text via private dial-up or fax
are lost.
