How much data are we talking about here?

One alternative to Alan's thin clients would be to have one fast Linux
computer with lots of RAM and run Windows on a virtual machine (eg
VirtualBox). Its easy to share files / folders between Linux and Windows
on the Linux file system and also back the lot up to an external or
internal drive. If you are dealing with less than 2 TB portable drives
are readily available, even, four 2 TB drives would be less weight than
a laptop.

I run Windows in VirtualBox on openSuse with 8GB Ram (I never run out of
Ram) for all my main desktop needs and carry any files when traveling on
a portable drive the size of which varies according to my needs for that
trip. The benefit of running Windows on a Virtual Drive is that you can
move it from one Linux box to another with all its apps and not have to
re-install anything. You can also backup the Windows Machine on your
portable drive.
